CIEH Level 2 Award in Food Safety in Catering
Food safety law requires all food
handlers to be trained according to their food handling work
activities. To help businesses ensure that employees are
trained we run a nationally recognised training course, the
CIEH Level 2 Award in Food Safety in Catering (this
qualification replaces the former Foundation and Basic
courses).
Successful completion of the course provides a qualification
awarded by the Chartered Institute of Environmental Health (CIEH),
the leading awarding body for food safety, health and safety and
environmental qualifications.
Who is the course intended for?
This course is intended for anyone working in a catering or
hospitality setting where food is prepared, cooked and served.
Typical environments may include pubs, hotels, restaurants, retail,
contract catering, fast-food outlets, hospitals, care and nursing
homes, schools, prisons and the armed forces.
Candidates must attend the full one-day course and successfully
complete a short written multiple-choice test at the end of the
day. Arrangements can be made, upon request, for an alternative
oral test to be taken. There are no formal entry requirements but
candidates should be 16 years or older.
Existing Foundation and Basic certificates remain valid but
anybody who has held one of these certificates for several years
may wish to attend the new course as a refresher.
Food business operators must ensure that food handlers are
supervised and/or instructed and/or trained in food hygiene matters
appropriate to the work that they do. Successful completion of this
course can help towards compliance with this requirement. However,
compliance need not necessarily involve attending formal and/or
accredited training but many good food businesses choose to do so.
The necessary skills can be obtained in other ways such as through
on-the-job training, self study or relevant prior experience.
What does the course cover?
The one-day course covers:
- The importance of food safety.
- Hazards to food.
- Physical and chemical hazards.
- Biological hazards.
- Illness from food.
- High-risk food.
- Time and temperature control.

- Premises and equipment.
- Cleaning and disinfection.
- Food pests.
- From production to safe storage.
- Preparing and presenting food.
- Food safety control.

On completing the course employees who handle food will gain a
firm grasp of the importance of food safety and knowledge of the
systems, techniques and procedures involved. They will have the
confidence and expertise to deliver quality food safely to
customers.
Course dates and booking
We can accommodate a maximum of 20 delegates for each course,
the cost is £57 per person and includes tea and coffee. To help
keep the cost of the course to an affordable level, lunch is not
provided. Courses start at 9am and finish at 5pm.
Courses are held in the Council Chamber at Suffolk Coastal's
offices at Melton Hill in Woodbridge. This is a wheelchair
