How clean is your kitchen?
Effective cleaning and disinfection is essential to get rid
of harmful bacteria and stop them spreading to food. Recent
research has shown that cleaning in food premises often fails to
meet acceptable standards - for example, surfaces that appear to be
visually clean have been found to have residues of germs that
cannot be seen.
The proper cleaning and disinfection of food premises can
contribute significantly to controlling food safety hazards and
risks associated with cross-contamination and inadequate cleaning.
Cross-contamination is one of the most common risk factors reported
in outbreaks of food poisoning.
Who is the workshop for and what does it cover?
This workshop is designed to give food handlers the skills to
effectively clean their kitchens and maintain these standards. It
is relevant for any organisation where food is prepared - such as
in hospitality, food manufacturing and food retail (including
butchers, restaurants and food producers). The workshop has been
designed to meet the needs of small and medium sized
businesses.
The following subjects are covered:
- Why clean and disinfect? - the importance of cleaning and
disinfection in food premises.
- Preparation for cleaning and disinfection - the need for
proper preparation before commencing cleaning operations in food
premises.
- What products to use and are they effective against bugs such
as E.coli.
- Maintenance of cleaning and disinfection - standards and
documentation.
Workshop dates and cost
The cost of the workshop is £20 (£15 if booked at the same time
as a CIEH Level 2 Award in Food Safety in Catering
course).
